Proud to have earned the e-Cornell Plant-Based Nutrition Certificate!

I am excited and proud to announce that I just earned the Plant-Based Nutrition Certificate from T. Colin Campbell Center for Nutrition Studies and eCornell.

Taking this course has been on my bucket list as I have continued to be on a plant-based quest for knowledge since 2012.

It is my hope that the material I learned from this course will enable me to be even more helpful to people who are interested in or living a plant-based lifestyle.

I would like to thank my family for encouraging me to submit my application for scholarship. Also deserving thanks is Plant Pure Communities for making access to this scholarship possible.

Making Deals With Cheat Meals

The excuses are endless!

I am whole food, plant based, sugar, oil and salt free

100% every day. 

My goal: to avoid all forms of cancer, dementia and other undesirable health related outcomes.

Just because symptoms of diseases are not felt, does not mean diseases are not in our bodies.

Every day you can find an excuse. Smoking just one cigarette once in a while will probably not get me to be a habitual smoker. Drinking alcohol once in a while may not turn me into an alcoholic. (learn more about how much alcohol)

Eating non compliant food like chocolate, sweets, salt, cheese, and ice cream once in a while will not make me over weight. (See below for yummy compliant recipes)

I have committed myself to educating people about how to achieve optimal health, and feel so fortunate to have stumbled upon this lifestyle!

My body had many years of exposure to the standard American diet, and I may never reverse all of the damage from the previous years when I thought I was eating healthy. An unwanted medical diagnosis would never be guilt free for me if I chose to cheat once in a while. Adopting this lifestyle does not guarantee that I will not get cancer, dementia, etc, but I choose not to play Russian Roulette with my body.

Cheat meals cheat you.

Having occasional cheat meals will never feel as good as healthy does!

Mentoring Leaders of Meetups & Pods

Meetup Group Shot March 2018My husband Rick and I formed a Whole Food, Plant Based group in May 2016. We are now leaders of two groups in different locations, meeting a total of three times a month.

We mostly have demonstrations and Plant Luck dinners. Occasionally, we will meet at a local restaurant after carefully planning with the owner to serve a compliant menu to our group. Find a Restaurant – Eat Vegan, No Oil Food

We began these groups via the Meetup application Meet Others: Socialize with like minded people so you don’t lose your mind. We added our group to the PlantPure Communities Pod network when it began in late 2017 Meet Like Minded People: The Free, Pod Program.

As Pod leaders in the PlantPure Communities network, we volunteered to be mentors of new Pod leaders. When we establish initial connections with these mentees, we give them access to this blog and our BeGreenWithAmyYouTube so that they can have access to helpful information.

Recently, one of our mentees, Ptery, emailed to say that she tried the Cheese Sauce Recipe. She was so happy about how it turned out that she shared her photo.

Now, as group leaders and mentors, Rick and I celebrate each time we positively influence another person’s life.

Find a Restaurant – Eat Vegan, No Oil Food

Beauty of Sprouts Restaurant Campaign

As a Meetup/Pod Leader, I invite you to participate in the Plant Pure Communities’ Restaurant Campaign! I have also provided a link to the list of restaurants which have been identified.

The goal of the Campaign is for every restaurant across the nation and across the globe, to offer on their menu at least one plant-based meal with no oil. Besides adding a new healthy meal to their menu, and likely growing their customer base, restaurants who achieve the meal standard requirements are eligible to receive a Certificate of Participation that they may display on the premises.
Find a Pod in your area: Meet Others: The Free, Pod Program.

This page is a place for you to connect with others who are making healthy changes happen in restaurants around the country.

Here is the link to restaurants which have been awarded the PlantPure Communities Restaurant Certificate.

Also, remember that there are apps like Happy Cow which can be very helpful in identifying WFPB friendly restaurants.

Do you know of a restaurant which offers at least one vegan option and is willing to prepare it without oil, upon request? If so, let me know the name of the restaurant and what vegan, no oil dish they have prepared for you. I will help you present them with a Plant Pure Communities Certificate.

One way to help your favorite restaurant get on the list is to ask the owner to display this sign. Print it out and send me a picture showing the displayed sign with the name of the restaurant in the photo:

Tips on Eating Out

Restaurant Waiter & Customers

“Review the menu for entrées and side dishes to identify those from which animal-based meat, cheese, dairy, and eggs might easily be removed.”

This is what Plant Pure Communities recommends. They have launched a Restaurant Campaign to help us navigate the menu.

Here is what they recommend:

“Items to look for:

Baked potato or sweet potato, brown rice, steamed vegetables, salads, veg soups, and plant-based protein options, such as tofu.

Create a meal out of appetizers and side dishes.

Ask for sauces to add flavor: balsamic vinegar, tahini, lemon and lime juice, miso, soy sauce (low sodium) and marinara (check that marinara is made without cheese).”

Many restaurants add oil (even to steamed vegetables!), sugar and salt to their food. Ask the manager to be sure.

I would also add Indian restaurants use Ghee (clarified butter) in some of their recipes. They don’t all know the difference between vegetarian and vegan. Call ahead and/or check out online menu. Confirm with server that there is no ghee, yogurt, milk or cheese.

Stop Sugar Spikes

Avoid processed foods that cause collagen damage and age skin, like added sugars and deep fried foods.

Protect your hands.

With this way of life I find I am washing lots more produce.

Exposure to water can be drying to skin and nails.

You might consider wearing gloves like these when you wash produce, dishes or anytime you get your hands wet or exposed to cleansers/chemicals to clean.

After washing hands or exposing them to moisture, be sure to pat completely dry with a clean, dry towel.

Many moisturizing creams contain unnecessary chemicals which can be damaging to skin. Some “non-greasy” formulas contain alcohol (which can be drying to the skin) in order to make them dry quickly after application. Instead, use pure, 100% aloe vera gel on affected areas, especially before bed.

Fitness and Exercise, Need to know

Is Exercise Necessary?

Before I changed over to this lifestyle, I began with a Zumba DVD. I barely made it through the beginner version. Over time, as I transitioned to this way of eating, Zumba was not challenging enough (if you don’t break a sweat, you are not working).

I now rotate through DVD’s of ( cardio, yoga, weight lifting, hula hooping) like P90X, P90X2, Jillian Michaels, etc. I struggle with finding DVD’s which match my level of fitness and also keeping it interesting and new.

If I do not exercise every day, I risk eliminating it totally. I average 45 minutes of DVD workouts, 30 minutes walking the dog and of course house cleaning and yard work too.

If you need group support, join a local class in a community center or health club. There are so many types of classes available; like yoga, weight training etc. Many of these classes have various levels from things like beginner chair yoga to advanced boot camp.

I think the point of the 90 minutes is that we sit too much. If you don’t have access to a community center, health club or DVD’s, you can deep clean your house, wash and vacuum your car, walk your dog, etc. If possible, don’t sit for more than an hour.
