Rick’s Tuscany Farro Soup
Serves: 6 to 8
Appliance:
Instant Pot or electric pressure cooker
1 Bag Frozen Onion and Peppers (20 oz)
3 Celery Stalks (chopped)
3 Carrots (chopped)
2 Cloves Garlic (minced)
2. TBS Table Tasty
1 TBS Chili 9000
1 Cup Farro (soaked-several hours or overnight)
1 Box Pomi, chopped tomatoes, (salt free) or 1 Can (16oz) (salt free) or 2 cups of fresh tomatoes, chopped.
1 Can Salt-Free, White Beans
6 Cups Water
1 Tsp Ground Basil or 1/4 cup fresh
1 Tsp Ground Parsley or 1/4 cup fresh
Put Instant Pot on Sauté Mode
Place onions and peppers in Instant Pot and sauté for 3-5 minutes, stirring occasionally.
Add remaining ingredients.
Press Manual and set for 12 minutes cook time on High Pressure.
NPR – Natural Pressure Release.
Serve with Rick’s Parmesan (Vegan) Cheese
Note:
Can substitute:
1 tsp red pepper flakes or ground, black pepper for Chili 9000
This recipe can be used in a 6qt or 8qt Instant Pot. Cut ingredients measurements in half if using a 3qt Instant Pot.
This can be stored in an air tight container in your refrigerator for up to one week.
