Gratifying Granola

8 cups old-fashioned rolled oats, organic if possible
1 cup steel-cut oats, organic if possible (optional)
¼ cup organic hemp seed
¼ cup sesame seeds
¼ cup organic ground, flaxseed
1 cup chopped walnuts and/or almonds (optional)
1 cup unsweetened flaked coconut (optional)
1 cup sunflower seeds (optional)
1 tbsp. ground cinnamon

1 tbsp. organic cacao powder (optional)

1 cup unsweetened applesauce
¾ cup date paste or soaked dates
¼ cup maple syrup or date syrup

1 cup water or non-dairy milk
1 tbsp. vanilla or equivalent vanilla powder
¼ tsp. almond extract (optional)

1 cup raisins, ½ cup golden raisins, chopped dates, and/or other dried fruits as desired – added at end

Preheat oven to 325 degrees F. If desired line a baking sheet or large pan with parchment paper or a silicone mat. Beverly uses a lasagna pan to help keep granola from spilling into oven when mixing.

Combine dry ingredients in a bowl – exclusive of raisins or dried fruit.
Combine wet ingredients – using your choice of sweeteners to total approximately 2 cups liquid. If using date paste heat ingredients in a saucepan to melt it. If using whole dates (remove pits) use a high-speed blender to liquify. May omit maple syrup – increase other sweeteners

Pour wet ingredients over dry ingredients and toss well to combine and coat everything. Spread in a baking pan and bake for 35-45 minutes until golden. Stir every 7 minutes. If you like it soft, cook it less – if you like it crispy, cook it longer.

Remove from the oven and add the raisins and/or dried fruit of your choice. If using coconut flakes you may choose to add them after baking as well.

Store in an air tight container. Keeps well. Enjoy!
