- Add rolled oats and cinnamon to a small jar. Vicki used a wide mouth funnel to pour the oats.
- Carefully add enough almond milk into the jar to barely cover oats.
- Top with fruit, raisins or dates, and nuts.
- Cover jar tightly, and refrigerate overnight (or longer).
- In the morning, empty jar into another bowl, and warm briefly (if desired), and enjoy!
- Note: Tightly covered, overnight oats will stay fresh in the refrigerator all week.
- Vicki likes to use a large mouth funnel.

- Place salad veggies in medium size bowl, and set aside.
- To make dressing, place cashews, soy milk, water, lemon juice, mustard, vinegar, and saltĀ in aĀ high-powered blender, and process until smooth.
- Toss salad with desired amount of dressing, and refrigerate the remainder. Top salad with roasted pistachios
(if desired), and serve immediately. - Note: Add any of these to make your salad extra satisfying: black beans, steamed corn, or/and leftover quinoa.

- Cook pasta according to package directions.
- Drain and set aside.
- Meanwhile, heat a large nonstick skillet over medium-high heat. Add onions and dry sautƩ until translucent. Sprinkle a little bit of water as needed to prevent sticking to the pan.
- In a high-powered blender (like aĀ Vitamix), combine the cooked onion with cashews, milk, water, red peppers, nutritional yeast, lemon juice, mustard, salt, and cayenne, and blend until smooth.
- Combine warm sauce with hot pasta, and serve immediately.
- Note: For a nutritional boost, add your favorite veggies (such as cooked broccoli or cauliflower, steamed baby spinach or kale, roasted asparagus or butternut squash, etc.) to finished pasta sauce before serving.
