Black Lentil Tomato Stew Ingredients

Instructions

  1. Sweat onions and stir frequently over medium heat for 5-7 mins or until
    translucent.
  2. Add minced garlic and stir for another 5 mins
  3. Add cumin, coriander and thyme
  4. Add diced tomatoes and continue to stir frequently.
  5. Add in mushrooms and stir for another 3 mins or until translucent
  6. Add black lentils and add broth/water until just covers the surface of lentils
  7. Then add red miso paste and bay leaves. Stir frequently.
  8. Turn up heat to boil, once boiling then lower heat back down to simmer
  9. Add red cooking wine and balsamic vinegar.
  10. Simmer for another 15 mins
  11. Add dino kale and cook for another 3 mins
  12. Add black pepper and adjust other seasonings if needed
  13. Plate and serve and garnish with curly parsley
  14. Garnish with parsley.
