Cooking sweet potatoes in the Instant Pot is fast, easy, and brings out their natural sweetness. The best part? The skin separates effortlessly from the potato, making peeling a breeze!
Why Use the Instant Pot?
Sweet potatoes cooked in the Instant Pot turn out incredibly soft, moist, and naturally sweet—almost like candy. Unlike baking, which can sometimes dry them out, pressure cooking locks in moisture, giving you perfectly tender results every time.
How to Cook Sweet Potatoes in the Instant Pot
What You Need:
- About 3 pounds (about 8 medium sweet potatoes) or white potatoes
- 1 cup of water
- Instant Pot trivet (to keep them elevated above the water)
Directions:

- Prepare Your Potatoes – Rinse the potatoes well. No need to peel them; the skin will easily come right off after cooking.
- Set Up the Instant Pot – Pour 1 cup of water into the Instant Pot and place the trivet inside. Arrange the potatoes on top.
- Pressure Cook – Secure the lid and set the valve to sealing. Cook on medium pressure for 6 minutes.
- Natural Release – Let the pressure release naturally until you can open the lid (about 5 – 7 minutes). If smaller, white potatoes try 3 minutes. Larger, white potatoes – 4 minutes.
- Enjoy! – Once they’re cool enough to handle, gently pull at the skin—it will slide right off. Now you have perfectly cooked potatoes, ready to eat!
How to Use Your Instant Pot Sweet Potatoes
These sweet potatoes are so soft and delicious you can eat them plain, but here are a few ways to enjoy them:
- Mash them up and add cinnamon or a splash of plant-based milk.
- Top them with this delicious Black Bean Salsa
- Dice and add to grain bowls or salads.
