Esther Lebeck Loveridge has a passion for sharing the secret of her dramatic weight loss story. She says β€œIt is never too late to begin a journey toward health”. She took her first step at the age of 72 by following β€œThe McDougall Program for Maximum Weight Loss”, a plant-based diet.
Esther has been designated as a β€œStar McDougaller” and her success story appears on Dr. McDougall’s Health and Medical Center website. She has a BA in Psychology and more recently completed β€œThe Starch Solution Certification Course”.
She is the Administrator of β€œEsther’s Nutritional Journey” on Facebook where she supports thousands of followers on a daily basis with her inspired words of encouragement.
Esther was featured on the August 5, 2019 cover of Woman’s World Magazine (going from size 26 to size 6). She has told her story on the radio, international interviews and at the SacTown VegFest2019.

Esther’s 3-2-22-10 Rice in the Instant Pot Instructions

  1. Put ingredients in the Instant Pot
  2. Set the timer for 22 minutes
  3. Let the Instant Pot stay on warm for 10 minutes. Done.

  1. Place rice and liquid ingredients in the Instant Pot
  2. 22 minutes in the Instant Pot
  3. Leave on warm for 10 minutes
  4. Add can of drained pineapple chunks when rice finishes cooking.

  1. In a pressure cooker or Instant Pot, add water, uncooked Brown Rice.
  2. Set the timer in the Instant Pot for 22 minutes and let it
    release naturally for 10 minutes.
  3. Add a whole package of C&W Birds Eye The Ultimate Southwest Blend.
  4. Optional add balsamic vinegar and / or pineapple.

  2. This is Dr. Michael Greger’s list of grains that are the best for feeding our gut bacteria. He called it them his Probiotic food. Dr. Will Bulsiewicz, The Gut Health MD says that our gut bacteria need as much variety.

  1. In large stock pot, saute’ onion with garlic in water until onions are soft.
  2. Mix in remaining ingredients.
  3. Heat on stove until warm enough to serve.

INSTANT POT – Esther’s REVISED QUICK REFERENCE GUIDE

1 Minute Quinoa: 1 Cup quinoa + 1 Β½ Cups water. Manual setting 1 minute: Quick release.

Lentils: 1 Cup beans + 2 Β½ Cups water. Manual setting 15 minutes.

Soak Beans: Rinse beans. 1:4 ratio beans to water. Manual setting 4 minutes. Keep warm 10 min. Strain and rinse.

Beans: Saute 1 onion in Saute Mode. Add desired spices such as cilantro, ΒΌ tsp chipolte, Β½ tsp cumin and 2 cups soaked beans and 2 cups water. Manual setting 10 minutes. Keep warm 20 min

Beans made easy: One part beans, 5 parts water. Manual setting 45 minutes. Natural release. (No soak method).

Perfect Brown Rice: 3-2-22-10: 3 Cups water, 2 Cups rice. Manual setting 22 minutes. Keep in warm mode 10 minutes. Quick release. ( I have left rice in the pot for over an hour and it’s ok).

Steel Cut Oatmeal: 1 Cup Oats + 3 Β½ Cups water. Manual setting 3 minutes.

Oat Groats: Rinse 1 Cup grouts + 1 Β½ C water. Manual setting 40 min. 30 min on warm.

Potatoes: Potatoes + 1 Cup water. Manual setting 15 minutes. Quick or delayed release.

Baby Potatoes: Potatoes + 1 Cup water. Manual setting 13 minutes. Quick or delayed release.

Sweet Potatoes: Sweet potatoes + 1 Cup water. Manual setting 13 min. Keep warm 10 min. or less. Release.

Broccoli and Zucchini: Manual setting 0 minutes. (By the time it comes up to pressure, they are done). Quick Release. I prefer a head of broccoli instead of flowerettes which can get mushy.

Brussels Sprouts: Brussels sprouts + 1 Cup water. Manual setting 3 minutes. Quick release.

Beets: Whole beets (& greens if you wish) + 1 Cup water. Manual setting 15 min. Quick release.

Carrots: Manual setting 4 minutes. Warm 4 minutes.

Green Beans: Manual setting 2 minutes. Quick release.
