Greenings Green Warrior! If you’re looking for a simple and delicious way to enjoy purple cabbage, this recipe is perfect for you. With just a few ingredients and minimal prep time, you’ll have a tasty and healthy side dish ready in no time. I recently saw Jane and Ann Esselstyn show a purple cabbage recipe similar to this. Balsamic Roasted Purple Cabbage Ingredients

Balsamic Roasted Purple Cabbage Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Line stainless steel baking tray with parchment paper or silicone baking mat
  3. Place cabbage slices onto baking tray.
  4. Cut off the hard end of the cabbage. Then, slice the cabbage into 3/4 inch thick pieces.
  5. Optional – spread no salt mustard on top of each slice
  6. Drizzle balsamic vinegar over the cabbage slices. Sprinkle granulated garlic powder evenly on top.
  7. Place the baking sheet in the oven and roast for 45 minutes, or until the cabbage is tender and slightly crispy around the edges.
  8. Remove from the oven and let cool slightly before serving. Enjoy as a side dish or as a healthy snack. Delicious warm or cold.
  9. This roasted purple cabbage dish is not only vibrant and flavorful but also packed with nutrients. The balsamic vinegar adds a tangy sweetness, while the garlic powder enhances the savory notes. Perfect for any meal, this simple recipe is sure to become a favorite in your kitchen!
