Mexican French Fries Instructions Option 1
- Cook potatoes in the instant pot for 8 minutes with a quick release
- Remove immediately.
- Bake potatoes in oven at 350 degrees for about 40 – 50 (depends on size) minutes or until slightly soft.
- Remove immediately.
- Cool to room temperature and chill in the refrigerator overnight or for several hours.

To make the Mexican Loaded French Fries: Ingredients
Mexican Loaded French Fries Air Fryer Instructions
- Preheat air fryer to 375 degrees.
- Remove potatoes from refrigerator.
- Cut into french fry shape. Air fry 375 degrees for 30 minutes or until desired crispness.
- Alternatively you can preheat the conventional oven to 375 degrees.
- Bake the potatoes on the regular or convection setting for 30 minutes or until desired crispness.
- in a small bowl, mix refried beans, onion powder, garlic powder, cumin, smoked paprika, and optional chipotle chili powder until combined.
- Heat in a pot on low to medium heat.
- Taste and adjust seasoning as needed.
- When french fries are done to your liking, place on a large dinner plate or platter.
- Add refried beans, salsa, guacamole or sliced avocado, onion and cilantro.
- Add optional cheeze sauce and plant-based sour cream for a decadent addition.
