ESPRESSO OATMEAL COOKIES Instructions

  1. Preheat oven to 350 degrees.
  2. In a large bowl, mix all ingredients until well combined.
  3. Scoop about 2 tablespoons of batter for each cookie onto a parchment- or silicone-lined baking sheet. You can use this scoop.
  4. These will not spread very much, so flatten the mounds of batter a little bit.
  5. Bake for 10 minutes, or until tops feel firm.
  6. Remove from oven and place pan on cooling rack
  7. Enjoy warm or at room temperature.
  8. Makes about 12 to 14 cookies (2-inches each)
  9. Rich and flavorful, these cookies are very popular at our house. My husband and daughter just love these!
  10. Optional – after cookies are not too hot to touch, press in a few chocolate chips in each cookie.
