In the realm of whole food, plant-based cooking, we’re redefining classic favorites like jam into nutritious and delicious alternatives, and today, it’s all about strawberries. Let’s explore how to create a mouthwatering strawberry compote that’s perfect for spreading on toast, swirling into plant based yogurt, or drizzling over plant based pancakes or cheeze cake!

Simple ingredients!

  • Fresh strawberries: Packed with antioxidants, vitamins, and natural sweetness, strawberries are the star of this recipe. Opt for ripe, juicy berries for the best flavor or use frozen for convenience!
  • Unsweetened date syrup: For a touch of sweetness without refined sugars, unsweetened date syrup adds a delightful depth of flavor.
  • Chia seeds: These tiny powerhouses are packed with fiber, omega-3 fatty acids, and protein, and they help to thicken the compote naturally.
  • Fresh lemon juice: A splash of lemon juice brightens the flavors and balances the sweetness of the strawberries.
  • Optional: Vanilla extract or cinnamon for added depth of flavor.
  1. Prepare the strawberries: Wash and hull the strawberries, then slice them into quarters or smaller pieces, depending on your preference.
  2. Cook the strawberries: In a saucepan over medium heat, add the sliced strawberries and a splash of water to prevent sticking. Cook the strawberries until they begin to soften and release their juices, stirring occasionally.
  3. Sweeten the compote: Once the strawberries are soft, stir in the unsweetened date syrup to sweeten the compote to your liking. Start with a small amount and adjust according to taste.
  4. Thicken with chia seeds: Reduce the heat to low and sprinkle chia seeds over the strawberry mixture, stirring well to combine. Allow the compote to simmer gently until it reaches your desired consistency, stirring occasionally to prevent sticking.

  5. Continue cooking over medium-low heat for 10-12 minutes, occasionally mashing the fruit mixture to combine.
  6. Remove from heat and allow to cool thoroughly.
  7. Store in the refrigerator for up to 1 week or freeze in ice cube molds for up to 1 month.
  8. Reheat to serve with oatmeal, plant based pancakes, waffles or use as a topping for plant based cheeze cake!
