- Cook quinoa according to package; allow to cool.
- While the quinoa is cooking, prepare the Tangy Date-Lime Dressing.
- In a large bowl, combine quinoa with remaining ingredients.
- Mix in the dressing (use as much or as little as you wish).
- Serve immediately, or chill overnight.
- Optional stir ins: 1/3 cup organic Corn; ¼ cup scallions; ½ cup avocado chunks; small handful of currants; ½ cup halved organic, cherry tomatoes.

- Whisk all ingredients in a small bowl until fully combined.
