FRUIT TART CUPS CRUST Ingredients

FILLING

FRUIT TART CUPS Instructions

  1. Blend crust ingredients in food processor and shape into pie pan or as tarts in silicone muffin tin.
  2. Zest lemon with zester
  3. Blend filling ingredients in a Nutribullet until creamy.
  4. Fill tart cups and top with fresh fruit and berries (kiwi, mango, strawberries, blueberries, etc.)
  5. Refrigerate (preferably freeze for at least 2 hours & transfer from freezer to refrigerator about 1 1/2 – 2 hours before serving) until ready to serve.

Hello beautiful people! My name is Jennifer Diamond and for me, my journey has been anything but a straight or simple road. Although I did lose some weight in the process, for me, it’s always been more about navigating through a constant stream of health challenges.

My journey has taken me through countless struggles, conditions, and treatments, shining a spotlight on the vital role that nutrition plays in our lives. It’s been a wild ride, and every twist and turn has taught me something new about the power of what we put into our bodies.

My health journey has shaped not only my physical well-being but also molded me into someone defined by resilience, perseverance, and gratitude. Life, for me, is no longer just about survival; it’s about thriving and soaking in every precious moment.

Though I’m not fully healed, I’m taking my experience and all that I’m learning and sharing it with the world around me. I’m in the process of becoming Certified as a Plant-Based Nutrition Coach so that I can help others who may be struggling like I once was.

  1. I was diagnosed with Interstitial cystitis in 1995. How can I get in touch with Jennifer Diamond. If she was able to heal her Interstitial Cystitis I really need to talk to her.
