  1. Add all ingredients to a large bowl and toss gently to combine.  Taste and adjust seasonings as needed.

  1. Place the chopped onions and red pepper on a non-stick pan on medium-high heat and dry-sauté, adding a little water as needed.
  2. After about 5 minutes, add the mushrooms and garlic. Continue cooking until the onions are brown and the mushrooms have released most of their liquid —another 10 minutes or so. Stir frequently.
  3. Add the chopped greens stir thoroughly so everything is well mixed.
    Then, add the marinara sauce and stir to incorporate.
  4. dd the spices, to taste. Some of my favorite spices are smoked paprika, oregano, cumin, garlic powder, onion powder, and chili powder, but you can use whatever you like. Stir well and continue to cook for 5 more minutes, adding a little water every now and then if needed.
  5. CHEF’S NOTE:

  6. Enjoy this as a side dish by serving with some cubed potatoes or sweet potatoes, mashed potatoes, or on top of brown rice, quinoa, or any other grain of your choice.
