2 medium cucumbers
1 cup cherry tomatoes
1 cup baby spinach
1 tablespoon fresh cilantro
½ tablespoon lemon or lime juice
Peel the cucumbers and spiralize or julienne slice them
Place into a bowl
In a food processor or a blender, mix together the avocado, tomatoes, spinach, cilantro and lime juice
Pour the sauce over the noodles
Serve and enjoy!
