Easy Summer Slaw Ingredients

Easy Summer Slaw Instructions

  1. Using a box grater, shred the cabbage, carrot, broccoli stems, daikon if adding raisins add and apple (don’t shred apple until the end to minimize oxidation).
  2. In large bowl, combine all shredded ingredients. Top with lemon juice and mix well.
  3. Add chopped dill and pine nuts then mix well to incorporate into the slaw.

Homemade Hummus Ingredients

Homemade Hummus Instructions

  1. Place a strainer or colander over an empty bowl and pour canned garbanzo beans into strainer collecting the bean liquid (aquafaba) in the bowl.
  2. OPTIONAL STEP: Peel and remove the skin from each garbanzo bean.
  3. To a high-speed blender (Vitamix) or mini-blender (NutritBullet), add garbanzo beans, tahini, lemon juice and zest, peeled garlic cloves, aquafaba, and spices. Blend until smooth and creamy.

Making the Wrap Ingredients

Making the Wrap Instructions

  1. Shave the stem of the collard green so that it’s flush with the leaf.
  2. In a stainless-steel pan, add about 1 inch of water and heat until simmering.
  3. Submerge leaf in the simmering water for 30 seconds flipping or repositioning as necessary.
  4. Remove and pat dry.
  5. Repeat for each leaf needed or desired.
  6. Slice cucumber and red bell pepper.
  7. Slice cucumber and red bell pepper.

  9. Slice cucumber and red bell pepper.
  10. Slice cucumber and red bell pepper.
  11. Spread hummus onto a collard green leaf.
  12. Add Easy Summer Slaw and top with cucumber, red bell pepper, and sprouts.
  13. Roll and enjoy!
  14. Note: You can use a toothpick to secure the wrap if needed.

My health journey has shaped not only my physical well-being but also molded me into someone defined by resilience, perseverance, and gratitude. Life, for me, is no longer just about survival; it’s about thriving and soaking in every precious moment.

Though I’m not fully healed, I’m taking my experience and all that I’m learning and sharing it with the world around me. I’m in the process of becoming Certified as a Plant-Based Nutrition Coach so that I can help others who may be struggling like I once was.

I’ve appeared on the Children’s Health Defense network (CHD-TV) Vax/Un-Vax program, and frequently speak at public and private events.

I’m here to share the highs and lows, victories and setbacks, in the hope that it might resonate with you and what you may be going through.
