Greenings Green Warrior! Check out this plant based recipe which combines the deliciousness of lemons, which tricks our taste buds to taste salty flavor, protein packed Quinoa and cancer fighting mushrooms!

Lemony Mushroom Quinoa Instructions BeGreenWithAmy.com

  1. With a fine strainer, rinse quinoa in cold water, drain.
  2. Combine quinoa and vegetable stock, cook about 15 minutes or until quinoa is done.
  3. While quinoa is cooking, place mushrooms in a saute pan over medium heat.
  4. When mushrooms begin to give off juice, add garlic and continue to cook until mushrooms are cooked to your liking.
  5. Combine quinoa, mushrooms and remaining ingredients in large bowl and gently combine.
  6. Serve at room temperature.
