Cheeze Sauce Instructions

  1. Fill a large pot with water, and bring to a boil.
  2. Add in the chopped cauliflower, carrots and bell pepper.
  3. Cook for 10-15 minutes, or until softened.
  4. Drain, and add to a food processor or high speed blender.
  5. Add in the remaining ingredients.
  6. Process/blend until smooth.
  7. Blend (add more water if you want it to be thinner)

Freezing your vegan cheese sauce can save time and ensure you always have a delicious, plant-based cheese alternative ready to go. Here are some tips to help you freeze and thaw your vegan cheese sauce effectively:

Instructions

  1. Cool Completely: Before freezing, make sure your vegan cheese sauce is completely cooled. This helps prevent ice crystals from forming and ensures better texture upon thawing.
  2. Portioning: Divide the cheese sauce into smaller portions based on how you plan to use it. I like to use Souper Cubes. You can use silicone muffin trays, silicone ice cube trays, or small freezer-safe containers. Portioning makes it easier to thaw only the amount you need.
  3. Label and Date: Label your containers or bags with the date of freezing and the contents. This helps you keep track of how long the sauce has been in the freezer. You can use wash off labels.
  4. Use Airtight Containers: Store the cheese sauce in airtight containers or freezer bags to prevent freezer burn and maintain freshness. If using freezer bags, squeeze out as much air as possible before sealing.
  5. Thaw Properly: To thaw the vegan cheese sauce, transfer it from the freezer to the refrigerator and let it thaw overnight. If you need it sooner, you can place the sealed container or bag in a bowl of warm water to speed up the process.
  6. Reheat Gently: Once thawed, reheat the cheese sauce gently on the stove over low heat, stirring frequently. Avoid using high heat, as this can cause the sauce to separate or become grainy. You may need to add a splash of water or plant-based milk to reach the desired consistency.

I’m always checking out ‘cheese sauces’, so am wondering if the almond butter that you use in this recipe is raw that you make yourself in the food processor, or from the store, such as the Costco roasted one? Thank-you. I’ve tried the cauliflower cheese sauces in the past, but yours looks like a good balance of ingredients.

    1. Greenings Gail! We have tried several versions of almond butter. We now purchase it from a local, organic market. I am not sure if it is raw or roasted. The ingredients say “almonds”.
