Greenings Green Warrior! This simplified, hearty tomato sauce is still packed with flavor and perfect for a quick, nutritious meal.
Ingredients:
- 1 cup cooked lentils (from microwave or Instant Pot)
- 1 (15 oz) can no-salt-added crushed tomatoes
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- ½ teaspoon black pepper
- ½ cup water
Instructions:
- Sauté the Onion and Garlic – In a medium saucepan, add a splash of water and sauté the chopped onion and garlic over medium heat until soft (about 3–4 minutes).
- Add the Tomatoes and Spices – Stir in the crushed tomatoes, oregano, and black pepper.
- Simmer the Sauce – Let the sauce simmer on low heat for 10 minutes, adding water to achieve the desired consistency.
- Add the Lentils – Stir in the cooked lentils and let the sauce simmer for another 5 minutes to allow the flavors to meld.
- Serve and Enjoy – Pour the sauce over your favorite whole grain pasta, zucchini noodles, or quinoa.
