Rick’s Sprialized Zucchini Meal Ingredients

Rick’s Sprialized Zucchini Meal Instructions

  1. Wash zucchini, (slice off & discard hard ends) and spiralize it with a spiralizer
  2. Place in microwave safe bowl
  3. Place cauliflower and tomatoes in a microwave safe bowl
  4. Mix crushed tomatoes and low salt Salsa in a microwave safe bowl
  5. Optional: bag of frozen vegetables instead of cauliflower – cook as directed on package
  6. Place microwave safe lid on cauliflower and tomatoes bowl and microwave for 5 minutes.
  7. Place microwave safe lid on sauce and heat in microwave for 5 minutes.
  8. Place microwave safe lid on zucchini and microwave for 2 minutes.
  9. Combine zucchini and vegetables in one bowl.
  10. You can add the sauce before serving or allow each person to spoon out sauce over their vegetables and zucchini.
  11. Enjoy!
