Rick’s Creamy, Dreamy Potato Salad

Potato Salad

Since 2012, I have truly missed the creamy, tangy potato salad. Finally, a whole food, plant based, no added sugar, oil or salt potato salad that even SAD people enjoy!


1 Avocado

1/2 cup raw, unsalted cashews & 1/2 cup water

1/4 cup raw, unsalted sunflower seeds, 1/4 cup raw hemp seeds & 1/2 cup water
4 Tablespoons Balsamic Vinegar
1/2 Teaspoon Cumin
1 Tablespoon Dry Dill or 3 Tbs Fresh
2 Tablespoon Date Syrup
1 Tablespoon Salt Substitute
1 (Juice of) Lemon
3 Tablespoon no or low salt, spicy brown mustard
1/4 Teaspoon Cayenne Pepper

2 1/2 pounds of potatoes red or Yukon Gold – unpeeled, cooked cut into bite size pieces
1/2 Red Onion Chopped
4 Stalks Celery Chopped
1 Bag Frozen Peas (Thawed)


Combine in High Speed blender:

Avocado (or substitute)
Balsamic Vinegar
Date Syrup
Salt Substitute
Lemon Juice
Cayenne Pepper

In large mixing bowl, combine:

Add contents of blender, fold into mixture.

Refrigerate and serve.

Garnish with microgreens, parsley, etc.

Dr. John McDougall Retirement Announcement

Dr. John McDougall has announced his retirement on his website. Here is his announcement. Although I do not follow all of his recommendations, I admire Dr. McDougall for dedicating over 50 years of his life to spreading the word about the benefits of adopting a whole food, plant based lifestyle.

I am announcing that I no longer will be seeing patients in a professional medical manner. After half a century of my life being dedicated to the medical care of people as their general physician, I am retiring.

I have moved on to working with more legislation, healthcare systems, and education projects.

My past and present work will be available (mostly without charge) through my website, www.drmcdougall.com.

As many of you know, Heather McDougall became CEO of the McDougall Program over 5 years ago. She leads a loyal and talented staff of professionals: Anthony Lim, MD, JD, Jeff Novick, MS, RD, LDN, Doug Lisle, PhD and Tiffany Hobson, Operations Manager.

The same principles of diet and food preparation are being used as in the past. The medical staff remains dedicated to helping you eliminate all unnecessary medications and avoid harmful procedures.

Mary and I will continue to oversee the entire business with Heather. Her dedication to the McDougall Program, as ours, will never waver. I will still make appearances in Santa Rosa at 3-day and 10-day Programs. As always, I will be checking daily on the work of my lifetime: The McDougall Program — Where people continue to regain their lost health and personal appearances.

Red Bell Pepper Dip


3/4 cup walnuts, chopped
1/2 cup scallions, chopped
1 red bell pepper, large, freshly roasted
2 teaspoons pomegranate molasses
1 teaspoon lemon juice, freshly squeezed
1 teaspoon ground cumin
1/4 teaspoon dried crushed chili flakes
1/4 teaspoon sweet paprika

To roast red bell pepper, char it on all sides directly over the flame of a gas stove. You can also roast it at 400°F until it has blistered all over. Once cooled, peel off the skin, remove the stem and seeds, and then chop.
Add roasted red pepper, scallions, 2 tablespoons of pomegranate molasses, lemon juice, cumin, and 1/2 teaspoon of Aleppo pepper flakes to a food processor and blend until smooth.
Stir in chopped walnuts.
Remove from food processor. Transfer into a bowl and serve with crudites.

The New Nutella

1 1/2 cups cooked black beans or 1 (15 ounce) can no-salt-added or low sodium black beans, drained
8 regular or 4 medjool dates, pitted
1/4 cup raw almonds
1/4 cup natural cocoa powder
1 teaspoon alcohol-free vanilla extract
1/4 teaspoon cinnamon
1/4 cup soy, hemp or almond milk


Place all ingredients in a high-powered blender or food processor and blend until very smooth. Add more non-dairy milk if mixture is too thick. Chill thoroughly.

Serve with fresh fruit.

Mushrooms are important to eat daily. Please remember to cook them before eating. Raw mushrooms contain potentially carcinogenic agaratine.  Cooking greatly reduces this compound.
